HOLIDAY COOKING: Thanksgiving Recipes, STUFFING!

This will be the first post of several recipes my family always requests at Thanksgiving.  The most requested is STUFFING.  Thirty one years ago, the day before Thankgsgiving, my husband and I were married.  I didn’t understand why my mother didn’t like the date we picked and kept trying to get us to pick another date.

Now, from my different perspective as the “Thanksgiving Cook”, I understand her need to be in the kitchen that day.  Oh well, marrying my husband was the best descision of my life!  But back to Thanksgiving recipes, our family favorite is a simple sausage bread stuffing, always requested by family and friends.

                                                                   SAUSAGE BREAD STUFFING

1/4 cup minced onion

1 1/2 dups chopped celery (stalks and leaves)

3/4 cup butter or margarine

1 lb. bulk pork sausage, crumbled and browned, use 1/4 cup (approx.) sausage grease along with the butter.

8 cups bread cubes (I like to used the seasoned kind)

1 1/2 teaspoons crushed sage leaves

1 teaspoon thyme leaves

1/2 teaspoon pepper

Brown pork sausage, do not drain, add the butter, onion and celery and brown until the vegetables are tender.  Stir in about 1/3 of the bread cubes.  Turn into a deep bowl.  Add remaining ingredients and toss.  Stuff turkey just before roasting.

(makes 9 cups, enough for a 12 pound turkey)
